No-Brainer Chili Verde

I’d forgotten this dish, but saw it on a menu in a new restaurant. Thought I’d give it a try one day. After the easy tamales came out so well that just translated to this perfectly. So simple! I served it over white rice. I used the copycat version of Lipton Soup Mix elsewhere on this site, it’s perfect.

Mango, Cucumber and Rice Salad

I adapted this heavily from a recipe in the July/August 2011 issue of Food Network Magazine. I thought I made enough changes to warrant calling it a new recipe, and it came out great. Hope you enjoy!

Jane’s Potatoes

My friend Jane proudly will say she knows where the kitchen is. Period. So when we went to her house for (Costco) chicken I was shocked at how good the potatoes were. And once she gave me the recipe I was shocked how simple. A quick and easy side.

Beer Can Chicken

The best way to get really moist roast chicken. Plus, it’s just too much fun. Spike or other poultry seasoning is better than salt and pepper.
