My friend Jane proudly will say she knows where the kitchen is. Period. So when we went to her house for (Costco) chicken I was shocked at how good the potatoes were. And once she gave me the recipe I was shocked how simple. A quick and easy side.

Equipment

Microwave, microwave-safe bag or covered microwave-safe dish, knife

Ingredients

  • 2 baking potatoes
  • 1 (1 ounce) envelope onion soup mix
  • 2 tablespoons olive oil

Instructions

  1. First of all, all measurements are bogus. She does this by ear, as did I last night. Both of us were using copy cat Lipton Onion Soup mix recipe 24452.

  2. Peel potatoes and slice horizontally as if for au gratin. I used one potato per person.

  3. Dump potatoes in a plastic grocery bag (Jane used to be a commercial sales person in the plastics industry and tells me they are pretty sterile -- plus they are going into the microwave.

  4. Add oil and soup mix.

  5. Tie off the top.

  6. Shake to mix.

  7. Cut slits in the bag.

  8. Microwave 10 minutes.

  9. YUM.
