This recipe offers a meat-free twist on the classic comfort dish, and the vegetarian sausages add a savory and flavorful element.

Ingredients
- 4 Beyond Meat/Impossible sausages (or your favorite plant-based brand)
- 2 tablespoons of olive oil
- 4 Potato(s), large, peeled and diced
- 1/2 cup of milk
- 2 tablespoons of butter
- salt and pepper, to taste
- 1 onion, large, thinly sliced
- 2 tablespoons of flour
- 2 cups of broth, vegetarian
- 1 tablespoon of soy sauce
Instructions
Boil the diced potatoes in a large pot of salted water until fork-tender.
Drain the potatoes and mash them with milk, butter, salt, and black pepper until smooth and creamy. Adjust the seasonings to taste.
In a pan, sauté the sliced onions in butter (or olive oil) over medium heat until caramelized.
Sprinkle flour over the onions and stir to coat evenly.
Gradually whisk in vegetable broth, soy sauce, salt, and black pepper. Simmer until the gravy thickens.
Place a generous serving of mashed potatoes on each plate.
Top with the vegetarian sausages.
Pour the onion gravy over the sausages and mashed potatoes
