This is a dish that I made up as I went along! It’s easy and uses ingredients that most of us have on hand. There is probably enough marinade for twice the amount of chicken. I wasn’t going to have a chance to stir the chicken so I wanted to make sure that it covered all of the chicken. I served this over brown basmati rice. The marinating time is not included. ****NOTE: I do not recommend marinating this for more than 2 hours. I find it gets a grainy texture if marinated too long. Enjoy!

I love to serve this unusual and sweet coleslaw in fresh pineapple halves for individual servings at a dinner party. It’s also a hit at a large gathering just put in a big bowl and garnished with greens.
I took the Hellmann’s® / Best Foods® Mayo recipe from TV and made some modifications to add some zest. I was interested in using this basic combination on chicken as it was the basis of the standard recipe I use to make great Garlic Bread: Mayo, Parm and Garlic. I started by coating the chicken with Frank’s® Hot Sauce to add just a little kick of flavor. The second modification is that I also added Garlic Powder to the Mayo mix, otherwise it is the basic recipe from Hellmann’s. I also used skinless boneless chicken thighs and the result was very very tasty, everyone enjoyed the flavor and the moistness of the chicken. The prep is easy and can be prepared quickly.
