Ingredients

  • 1 package of lemon Jello mix
  • 1 cup of hot water
  • 1/2 cup of granulated sugar
  • 1 6 oz package of cream cheese
  • 1 can of evaporated milk
  • 2 tablespoons of lemon, juice
  • 1 1/2 cups of graham crackers, crumbs
  • 1/3 cup of margarine, melted

Instructions

  1. Preheat 325°F (163°C)

  2. Dissolve the Jello in hot water and lemon juice. Set until syrupy.

  3. Mix together cream cheese, evaporated milk and sugar. Beat until fluffy.

  4. Combine cheese mixture and Jello mixture. Mix well.

  5. Mix together graham cracker crumbs and melted margarine until crumbly.

  6. Press most of the crumb mixture onto the bottom of the pan. Reserve some for topping.

  7. Spread the jello and cream cheese mixture over the top.

  8. Sprinkle with remaining crumb mixture.

  9. Bake for about 10 minutes - watch carefully to avoid burning.

  10. Chill completely.
