This easy to make Southwest Style Chili Chicken casserole is a fun way to mix things up a bit for dinner! Chicken, chilis, black beans, corn and tomatoes layered in tortillas and topped with cheddar cheese.

Ingredients
- 2 6 oz cans of green chili peppers, chopped and drained
- 1 bunch of green onions (salad onions) white and light green parts only, chopped
- 1/2 teaspoon of cumin
- 1/2 teaspoon of pepper
- 1 clove of minced garlic
- 1 can of black beans, drained
- 1 cup of corn
- 1 cup of chopped tomatoes
- 4 cups of shredded cooked chicken
- 20 corn tortillas
- 2 cups of shredded Cheddar cheese or cotija
- chopped cilantro for garnish

Instructions
Preheat oven to 350°F (177°C) and grease pan.
Mix Mix all ingredients together - except for the cheese and tortillas.
Assemble Layer the tortillas and chicken mix together like a lasagna. Start with a layer of tortillas, spread the mix over the tortillas, top with a sprinkle of cheese. Repeat, ending with layer of cheese.
Bake Cover with foil and bake for 30 minutes. Remove the foil and bake for another 15 minutes.
