Ingredients
- 1 pound of chorizo, sliced
- 1 onion, finely chopped
- 2 cloves of garlic, minced
- 2 15 oz cans of beans, cannellini, drained and rinsed
- 1 15 oz can of tomato(s), diced
- 1 cup of broth, chicken
- 1 teaspoon of paprika
- 1/2 teaspoon of cumin
- salt and pepper, to taste
- parsley, chopped for garnish (optional)
Instructions
Prepare chorizo In a large pot, cook chorizo over medium heat until browned. Remove excess oil, leaving about 1 tablespoon.
Sauté Add chopped onion and garlic to the pot. Sauté until softened.
Stir in smoked paprika and cumin, cooking for 1-2 minutes to release flavors.
Simmer Add beans, diced tomatoes, and chicken broth to the pot. Season with salt and pepper. Bring to a simmer.
Let the stew simmer for 15-20 minutes, allowing flavors to meld.
Taste and adjust seasoning if needed. Serve hot, garnished with fresh parsley.
