Ingredients
- 2 slices whole wheat bread
- Warm water (for soaking bread)
- 2 lbs lean ground beef
- 1 green onion, chopped
- 2 tablespoons onion, chopped
- 1 cup mild salsa
- 2 tablespoons Dijon mustard
- 1 teaspoon Worcestershire sauce
- 2 tablespoons garlic, minced
- ¼ teaspoon salt
- ⅛ teaspoon pepper
- 1 tablespoon barbecue sauce
Instructions
Preheat the oven: Preheat your oven to 375°F (190°C) and grease a 9-inch loaf pan.
Soak the bread: In a small bowl, soak the bread slices in warm water until softened.
Combine the ingredients: In a large bowl, place the ground beef. Drain the soaked bread and add it to the beef. Add the green onion, chopped onion, salsa, Dijon mustard, Worcestershire sauce, garlic, salt, and pepper. Mix by hand until well blended.
Shape the loaf: Form the mixture into a loaf and place it in the prepared loaf pan.
Bake: Bake for 1 hour . Remove from the oven, drain off any excess fat, and top the meatloaf with barbecue sauce.
Finish baking: Return the meatloaf to the oven and bake for an additional 15 minutes .
Serve and enjoy: Let the meatloaf rest for 5 minutes before slicing. Serve with your favorite sides and enjoy!

- Substitute salsa with spicy salsa for an extra kick.
