Rich Christmas Fruitcake

I have been making this particular fruit cake recipe for about 28 years now. It’s a traditional cake for weddings, birthdays and Christmas in Australia. Although I submitted the original recipe, I personally would soak the fruit for a day or two in port or brandy before I baked the cake, as I like a really moist and boozy fruit cake. I double or triple the recipe depending on the size tins I will be using, and often make about 12 of these in varying sizes as gifts for Christmas.

Creamy Carrots

This is my all time favourite carrot dish, that we only seem to have at Christmas ….. that is so wrong, so I had to get the recipe so I can have it whenever I like. I could quite easily and happily eat the whole lot by myself!

Aussie Christmas Rum Balls

This recipe has been used in our family for many years. It uses everyday ingredients and comes together in just a few minutes. I looked for similar on ‘Zaar and couldn’t find anything. Charlotte J has advised that Vita Brits (I prefer these to Weet-Bix) are available in the US @ http://www.aussieproducts.com/Aboutus.asp

Red Capsicum Marmalade

I found this on a New Zealand site. Sounded interesting so I’ve posted it to share. Quantity is only a guess as I haven’t made this myself yet, but I do intend to soon. Please remember that this is a preserve. The marmalade needs to sit for at least 6 weeks before you try it.
