This recipe is from week five of my food blog, “Travel by Stove.” I am attempting to cook one meal from every country on Earth, and Algeria is my fifth stop. This flatbread is cooked in a pan and has a texture similar to cornbread.

El Salvadorian Pupusas

Pupusas are a staple in El Salvadorian cuisine. They are thick, corn patties stuffed with beans, cheese, beans and cheese, or beans cheese and pork (called pupusas revueltas) and served with tomato sauce and curtido. For this recipe, I am making them with beans and cheese.

El Salvadorian Bean and Cheese Pupusas

Pupusas are, in my opinion, El Salvadorian comfort food! A pupusa is like a thick corn flour pancake filled with either beans, cheese, beans and cheese, or beans, cheese and pork (which is called Pupusas Revueltas). It is served with tomato sauce to pour on top or dip bites into, and curtido on the side. These things really put me in a happy place. Enjoy the recipe– I hope they put you in a happy place as well!

Jamaican Healthy Meat “patties” (Low Calorie/Low Fat/Low Glycemic)

This recipe is an idea I came up with, to satisfy my craving for “the real thing” while on a no salt, no fat, no wheat, low glycemic, healthy eating plan! Of course, though not flakey like the traditional dough made with butter and shortening, these are made similar to an omlette or crepe, and have all the flavor without the fat! If not on salt restriction, you may add salt to taste.
