Another recipe “stolen” from the Cambodian grandmother of a former student of mine. These are very similar to a dish served at a local Cambodian restaurant. At the restaurant you can also get it as an entree with rice. Prep time doesn’t include marinating.
This is a Vietnamese recipe from the website panningtheglobe.com. The last 2 ingredients are for the garnish.
I ate lots of Lok Lak on a recent holiday to Cambodia. It’s similar to Vietnamese Shaking Beef although the Cambodians don’t like to admit that. In Cambodia it might come with chips (fries) and a fried egg or rice-I liked the rice option. You eat it by wrapping portions of the meat and salad ingredients in a lettuce leaf, then dipping that in the dipping sauce (the best part of it I reckon). Sometimes the meat is sliced, sometimes it’s cubed-I prefer slices. Semi ripe tomatoes are preferred to ripe ones, but use what you have!
Trying to add different dishes and salads to the “Saturday Lunch at the Farm” crowd brought the dawn of new tastes and new ways of devouring lunch. This salad goes particularly well when “Tommy the Beefsteak Tomato” or “Penelope the Plum tomato” when in the summer you can actually smell the tomatoes maturing and growing big right before you eyes. The use of fresh mint really highlights this simple salad along with the use of fresh scallions, and cucumbers. Even during the cold winter, to bring this bright salad to the table can bring smiles and salad bowls handed down to add just a little more. This is a rustic salad that jumps up and grabs you to behold it. Hey, who said the “Farm” can’t be healthful too. Don’t hesitate to change the ingredients or using fresh green or red peppers instead of the chilies. Go ahead….it’s ok!
