Snowballs (Pecan Puff) Cookies
One of my favourites to make for Christmas! Just 7 ingredients and a melt in your mouth texture.

- 1/2 cup salted butter, softened
- 2 tablespoons sugar
- 3/4 teaspoon vanilla paste or 1 teaspoon vanilla extract
- 3/4 cup finely chopped pecans
- 1 cup of cake flour
- 1/4 teaspoon of salt
- Powdered sugar for rolling (about 1 cup)
Instructions
- Preheat oven to 300° and line a cookie sheet with parchment paper.
- Chop pecans in a food processor.
- Beat butter until soft with a mixer. Add sugar, vanilla, and pecans. Carefully add flour and blend well.
- Coat hands with flour. Use a scoop or spoon and shape dough into small balls about 1.5 inches.
- Place on lined cookie sheet.
- Bake at 300° 15-20 minutes. Cookies should be light in colour – not browned.
- While cookies are still quite warm, roll them in confectioner’s sugar. When cooled, roll in confectioner’s sugar again.
