Snowballs (Pecan Puff) Cookies

One of my favourites to make for Christmas! Just 7 ingredients and a melt in your mouth texture.

Ingredients

Units Scale
  • 1/2 cup salted butter, softened
  • 2 tablespoons sugar
  • 3/4 teaspoon vanilla paste or 1 teaspoon vanilla extract
  • 3/4 cup finely chopped pecans
  • 1 cup of cake flour
  • 1/4 teaspoon of salt
  • Powdered sugar for rolling (about 1 cup)

Instructions

  1. Preheat oven to 300° and line a cookie sheet with parchment paper.
  2. Chop pecans in a food processor.
  3. Beat butter until soft with a mixer. Add sugar, vanilla, and pecans. Carefully add flour and blend well.
  4. Coat hands with flour. Use a scoop or spoon and shape dough into small balls about 1.5 inches.
  5. Place on lined cookie sheet.
  6. Bake at 300° 15-20 minutes. Cookies should be light in colour – not browned.
  7. While cookies are still quite warm, roll them in confectioner’s sugar. When cooled, roll in confectioner’s sugar again.
