This recipe is a McCall's classic dating back to 1938, using pork, beef and tapioca as a binder it is gluten-free and super moist!

Ingredients

  • 2 thin 2-inch slices of salt pork, diced
  • 2 lbs of ground beef
  • 1/2 onion, diced
  • 1/2 cup of minute tapioca
  • 2 1/2 teaspoons of salt
  • 1/4 teaspoon of pepper
  • 2 cups of tomatoes

Instructions

  1. Preheat oven to 450°F (232°C)

  2. Fry out salt pork, add onion, and cook until golden brown

  3. Add pork, onion, and drippings to other ingredients and mix thoroughly.

  4. Bake in loaf pan in hot oven (450ºF) 15 minutes; then decrease heat to moderate (350ºF) and bake 30 minutes longer, or until done.
