A nice summertime pasta salad using rotini pasta, Tzatziki, fresh spinach, cherry tomatoes, kalamata olives, sweet peas, corn and chick peas. Crumble some feta or add your favourite cubed cheese. I make this and store in the fridge for an easy meal.

Ingredients
- 1 16 oz package of pasta
- 1 1/2 to 2 cups of tzatziki
- 2 cups of corn
- 1 cup of peas
- 2 cups of chickpeas
- 1 cup of cherry tomatoes
- 1 cup of kalamata olives
- 2 cups of fresh baby spinach
- feta cheese
- 1 avocado
Instructions
Cook the pasta according to the directions, let cool completely. Halve the cherry tomatoes.
In a large serving bowl, stir tzatziki into the pasta until well coated. Stir in the rest of the ingredients until well combined.
Garnish with avocados if desired.
Notes
For the salad in the picture, I didn't have feta cheese so I used cubed Havarti cheese and it worked very well. Amounts are approximate, use as much or little as you like!
