Ingredients

  • 1 pouch of oatmeal cookie mix
  • 1/2 cup (1 stick) of butter, cold
  • 2 tins of milk, sweetened condensed (not evaporated)
  • 3/4 cup of key lime juice, juice (or regular lime juice)
  • 1 container of whipped topping, thawed
  • 2 6 oz containers of yogurt
  • 1 tablespoon of lime(s), zest

Instructions

  1. Preheat Heat oven to 350 F. Grease the baking pan.

  2. Prepare crust Place the cookie mix in a large bowl. Cut in the butter, using a pastry cutter or fork until mixture is crumbly and coarse. Lightly press the crumb mixture into the bottom of the pan. Bake 10-12 minutes until golden brown. Allow to cool while preparing the filling.

  3. Mix In a large bowl, beat together condensed milk and lime juice with an electric mixer until smooth and thickened. Fold in whipped topping (reserve 1 cup for serving later) and yogurt.

  4. Pour Pour the filling over the crust, lightly smooth out with a rubber spatula. Sprinkle with lime zest.

  5. Chill Cover and refrigerate for at least an hour to set.

  6. Serve Cut into squares or bars and serve with a dollop of whipped topping.

Notes

This recipe is slightly tart, if you like more lime zing, add another teaspoon of lime juice or use Key lime yogurt instead of plain
