Cheddar, Crab and Wine Fondue

This recipe for Cheddar, Crab and Wine Fondue brings together 6 ounces crabmeat, 20 ounces cheddar cheese, shredded, 2 tablespoons all-purpose flour in a practical dish for home cooking. It takes about 10 min to prepare and cook. It makes approximately 2 servings.

Coq Au Vin by Julia Child

This recipe for Coq Au Vin by Julia Child brings together 1/2 cup lardons, cut into 1/4 by 1 1/2 inch strips (embarrassing fact, I spent $20 on Courvoisier to make this dish and used turkey bacon because I don’), 2 tablespoons olive oil (or more), 2 1/2 lbs ready-cut frying chickens, thoroughly dried (a selection of parts, or all of one kind, I used chicken thighs and removed the skin so they wouldn’) in a practical dish for home cooking. It takes about 1 hr 55 min to prepare and cook. It makes approximately 4 servings.

Basque Lamb Shanks

I have never tried this recipe in a slow cooker but I think it could easily be adapted . Cook the shanks on low all day, have the beans prepared and finish the last steps before serving. Great taste, don’t be scared of the 12 cloves of garlic.

Basque Chicken and Shrimp in Wine

This is from Paul Prudhomme’s Seasoned America. I like to substitute shrimp stock for the chicken stock. This should be served over rice or pasta, or with a good, crusty bread–something to sop up the delicious sauce. I’ve given instructions for finishing in the oven or on top of the stove.

Basque Lemonade

“What would summer be without lemonade? Actually, this can be considered more of a wine cooler and is definitely the kind of lemonade not to serve to children. With a massive heat wave being felt around the world, including Spain’s Basque region, it is most likely that the ‘ardaurgozatza’ is flowing daily.” Neither soak nor chill time is included.
