Sakhon’s Noodles

This is named after a dear student of mine who was originally from Cambodia. We had lunch in a Cambodian restaurant once and this is my “NO AUTHENTIC INGREDIENTS” copy of the recipe. At the time, fish sauce and such were not readily available even in California, so I faked it, but it turned out really well. My Cambodian and Vietnamese friends approve. It’s a fast easy weeknight dish and is very open to whatever veggies you have in the fridge. (I love shredded carrots, cucumber, zucchini, halved cherry tomatoes….) What’s best about it is that when I cook it I remember this troubled kid who finally made it 🙂

Basic Lemon Grass Curry Sauce

From an Asian website featuring Laotian, Cambodian and Thai recipes and cookbooks. It is a Cambodian recipe. Cook time does not apply to step 3, as your choice of vegetables or meat will dictate how long it will cook.

Cambodian Coconut Sauce

This is easy to make and can be served over cubed mango, strawberries, or even over canned fruit cocktail. I like it mixed into plain yogurt. You can serve it over pound cake that it topped with fruit. I toast some sweetened coconut flakes and serve it over the sauce, whether over fruit or in yogurt. It adds a wonderful finishing touch.

Hot Basil Chicken (Cha Kreung Satch Moan)

I found this on Facebook. There are several pages dedicated to Cambodian recipes, and this is one of them. There are fish sauces that are kosher, but I don’t know about oyster sauces. Usually vegan stores have some kind of imitation to replace the real thing.
