Cherry Tomato and Bocconcini Pizza

Bocconcini means small mouthfuls of cheese they are semi-soft, white and rind less unripened mild cheese and have a spongy texture. Originally made only from the milk of water buffaloes but cows milk is used now. Bocconcini are now available in supermarkets and packaged in whey or water. The originally recipe asked for 3 x 250 gram of cherry tomatoes but I thought it’s a bit excessive as the 14 cm pizza can hold only about eight tomatoes. I topped ours with basil as I found rocket a little bitter. You welcome to skip the dough and use store buy a pizza bases or Lebanese bread, it’s up to you. This recipe came from Sunday Hearld Sun, Sunday Magazine on 18 March 2007, it’s a Donna Hay recipe

Tuna and Corn Jaffles

In Australia toasted sandwiches with sealed edges are called jaffles and sandwich toasters makers, which are now electric, are called jaffle irons. These are named after the original jaffle iron, which was a long-handled hinged iron implement for toasting sandwiches in a campfire.

Peanut Butter, Banana and Sultanas Sandwiches or Pinwheel Style

Yummy little snack for little kids or big kids. Alternatively, you can use either two slices of the same bread (either two white bread or two wholemeal bread) it’s just to make it look pretty and healthy for kids. The pinwheel style is difficult to do without making a mess so if you don’t like a mess or a challenge. You can use two more slice of bread and place them on the top, this will then be a serving size for two. Please be careful with nuts, we don’t give Little Miss (DD) nuts because her cousin has a severe nut allergy.
