From Debbwl’s suggestion I have added strawberries to the recipe but of course you could add other fruit that is in season.
I love this when the fresh asparagus is in season. Sometimes I throw in some onion wedges or a red capsicum for colour with the asparagus. Prep time includes marinating time.
For beetroot lovers! A delicious, very low calorie, VERY low fat (0.1g!) side dish to accompany any main course. I found this recipe in Karen Meyer’s ‘The Artful Vegetarian’ and I have adapted it slightly in posting it for the Healthy for the Holidays Challenge.
2nd sons favourite dish. We eat this about once a month, though I vary the pesto, and occasionally add capsicums or olives.
