SO good. The beautiful color of blue for the sea, tropical in taste and sure to please. Made these up for my neice’s Bachelorette party. Number of servings depends on the size of your cups; I used 2 oz cups, so mine made about 20. Sugar free versions of jello work just fine as well!
Cocadas are a typical coconut candy or cookie that is served in Mexico, Brazil and over much of Latin America. They are oven baked but are served at room temperature to obtain their chewy and soft texture. Made with egg and shredded coconut, cocadas come in a variety of colors due to the modern use of food coloring, but the traditional ones are golden brown. They are often garnished with almonds, either whole or chopped. There are hundreds of recipes for cocadas which range in texture from the typical hard, very sweet balls to those which are almost the texture of flan. Other fruit, often dried, can be added to the cocadas to create variety. Cocadas are mentioned as early as 1878 in Peru. This is a Bolivian version, from the website BoliviaWeb. I bought a recipe book by a local women’s group on my recent trip to Belize (Silly Bug & Bittle Recipes) and this one sounds like something I would like. I love bread pudding and this looks easy and tasty. The original recipe called for condensed milk but wikipedia says that it’s the same thing as sweetened condensed milk. The recipe did not include baking time. I’ll update the recipe after I make it or someone leaves the baking time in their review.
