Greatest Chips (French Fries) on Earth

I saw this technique in the series Kitchen Chemistry by Heston Blumenthal and thought I’d share it here. Obviously the quantities don’t matter just do as many as you want. You’ll need a thermometer to do this recipe properly, but for the pre-cook you can just use a meat thermometer and could probably get away with guessing the warm versus hot oil temperature. I personally used bran oil but I think peanut oil would be another good choice but nothing wrong with just using regular vegetable oil either. I used a wok, Chinese scoop and infrared thermometer for the deep frying which is a neat way to deep fry using the more expensive oils because you need less oil in total and don’t feel so bad using fresh oil every time. Anyway back to the recipe, the title came from the series and after trying them I think I’d have to agree with Heston. Not as much effort as it sounds and really worthwhile.

Crunchy Tuna Cat Treats

These little cat cookies are the perfect treat for your feline friend – easy and inexpensive to whip up, and probably much healthier and lower in salt than commercial pet treats. My kitty loves them! They are the purrrfect way to show your cat you love him/her this Christmas 🙂

Pizza Scrolls

A great afternoon snack! If you don’t have a favoured pizza sauce use tomato paste and add some dried Italian herbs. Can be served hot or cold…great for the lunch box.

Apple Crumble

This is posted for a request. It comes from a very old copy of a PWMU (Presbyterian Women’s Missionary Union) cookbook. Crumbles are a favourite winter dessert for my family, and one I actually make, as they are so simple.

Rissoles

A friend gave me this recipe years ago. I’m not sure where it orginally came from. The Australian rissole is generally made from minced meat and pan fried, without a pastry covering, but sometimes with breadcrumbs. This recipe is suitable to freeze and for OAMC. Thanks to Tish I have added the directions.
