In Australia we call cookies biscuits. This recipe is from Super Food Ideas and the recipe states that it makes 28 cookies. I actually got 48 cookies from the mix but I do make my cookies smaller as I have two small girls that like one for each hand 😉 These make quite a sweet biscuit.
We made this today as a treat after Sunday lunch and everyone loved it. Served with homemade icecream and my personal favourite, cream! This recipe is posted in Australian measurements so 1 tablespoons equals 20ml (or 4 teaspoons).
I don’t like to do it all the time but sometimes when time is short or you’ve had an exhausting week, it’s nice to just open a can of spaghetii sauce & throw together a quick dinner. I use the Campbell’s sauce as I visit their factory sales at least once a year & stock up on soups etc.
Bocconcini means small mouthfuls of cheese they are semi-soft, white and rind less unripened mild cheese and have a spongy texture. Originally made only from the milk of water buffaloes but cows milk is used now. Bocconcini are now available in supermarkets and packaged in whey or water. The originally recipe asked for 3 x 250 gram of cherry tomatoes but I thought it’s a bit excessive as the 14 cm pizza can hold only about eight tomatoes. I topped ours with basil as I found rocket a little bitter. You welcome to skip the dough and use store buy a pizza bases or Lebanese bread, it’s up to you. My Zaar friend Kooka suggested making a toasted sandwich without the toast ! I got curious, played around with her idea and et Voila! she told me to post the recipe. Ok, healthy.. not really… yummy… sure is! Puff pastry here in the Netherlands is a pest to use in regular large pies becuase it comes in a box of 10 small individual squares. think jig-saw pieces then you want to make a large pie, and it usually takes me less time to make and roll my own… but my small ready made squares are PERFECT for this recipe.. if you are lucky enough to be able to buy ready made puff pastry in one big piece you will need to cut it up to fit. COMFORT FOOD… the fillings are as endless as peoples’ personal taste.. but things that cook quick, yes? I used three Knackworstjes but the Zaar database doesn’t recognise those so Smokies (mini knackworstjes) are the closest description I can get.
