I found this in a potato cookbook I picked up in a thrift shop and adapted it a little to suit our tastes. It’s a great side for a BBQ in the colder weather.
I love this when the fresh asparagus is in season. Sometimes I throw in some onion wedges or a red capsicum for colour with the asparagus. Prep time includes marinating time.
This recipe is a copy-cat of recipe #47819 by Rita. We can’t get the ingredients here in Australia, so I came up with this, but do check her recipe.
This is a combo my 2 1/2 year old DD came up with. I let her choose what she wanted in the smoothie and just threw it all together. She’s a pretty good cook for a 2 1/2 year old, it turned out well. The addition of spinach leaves was my input merely for extra nutrition, these are optional.
