Good Aussie Tucker Mate! I use this recipe all the time and it always comes up trumps! Damper is so versatile it is so nice served spread with butter on a cold night to serve with a bowl of steaming hot soup, or with casseroles or with salads in summer. It is great served with antipasto or dips on a platter or even great to take on picnics, to serve with anything you like. For something delcious try whipping up a batch of Recipe#283917 this butter goes so well with this damper and is so delicious.
A deliciously different recipe for spiced nuts which I came across this afternoon in the current issue of the Australian magazine ‘Woman’s Day’, and with my usual impatience just had to make this evening, with a few modifications – minus the chilli powder to meet our taste preferences – but I’d certainly make these complete with the chilli powder for friends, and have left the chilli powder in as an ingredient. In making these, I increased the garlic from 1 to 2 cloves, and I minced it rather than crushing it. I used cashews, macadamias and hazelnuts. Why, oh why do I keep buying all these magazines each week? Spot on if you guessed to check out their latest recipes! And it was worth buying this week’s just to have found this recipe! These would be demolished very quickly if served with other appetisers and drinks, and they’d be a great addition to salads and stir-fries – if they lasted that long! 🙂 Don’t add salt – or add it sparingly – if your nuts are already salted.
Yet another way to make use of those big blue crabs we are catching. 1 crab gave us 1 cup of beautiful meat for this.I can’t do what I suggest in the last step as I don’t have a griller (broiler) so I finished it with the lid on for a couple of minutes to set the top. That worked fine and would be good for camping. Just cook the onion and potato slower and longer if you can’t access a microwave.
Found this recipe in a Weight Watches Magazine Nov/Dec 2006 edition. They called them pumpkin hash browns but they are more like pumpkin patties. The patty could also be used for a Vegetarian Burger. They recommended Weight Watchers cottage cheese but I think low fat cottage cheese would be alright. Because I don’t like eggs, I used ‘Egg Like’ which is an egg replacer. I skipped the ‘garnish step’ and serve them with to tomato sauce.
