Spinach and Shrimp Miso Soup

This recipe for Spinach and Shrimp Miso Soup brings together 6 cups chicken broth or 6 cups vegetable broth (I used the lower sodium broth), 1/4 cup soy sauce (I used the low sodium soy sauce), 2 tablespoons mirin in a practical dish for home cooking. It takes about 30 min to prepare and cook. It makes approximately 4 servings.

Sabine’s Farina Dumplings

I think I’ve tried every dumpling recipe on RecipeZaar in an effort to duplicate my friend’s soup. Yesterday, I “caught” her making them for her boys. Maybe the one-on-one lesson did the trick. Here is her “recipe”

Armenian Kufta

This would be categorized as a ‘stuffed’ meatball! It’s a recipe that cousin Debbie, sister Diane and I worked on this winter, trying to replicate our grandmother’s kufta. It’s been many many years since we’ve had this, and I think we have it down pretty well. It can be made as a side dish or a main dish soup, by adding pasta and vegetables to the broth when you add the meatballs.
