Oven Baked Sweet Plantains
MMMM! I love plantains, especially sweet ones. This is a lower fat method of making “maduros” without the use of oil and frying in a pan.

This recipe comes courtesy of the domestic goddess herself Nigella Lawson. A beautifully flavoured flat omelet that can be eaten any time of day as a snack or light meal. We especially like it in crusty rolls/French stick as a hot sandwich, but would be great rolled up in a chapatti or just eaten flat on a plate.
This is delicious! It is a low fat recipe, without the low fat taste. The exotic spices of garam masala make this dish excellent to serve at any time. I cut the chicken breasts up so that the meat can absorb the wonderful spices easier. This is fabulous!
I saw the famously foul-mouthed chef do this on a live TV cook-a-long. It’s an easy curry to prepare, and big on flavour.
A tasty Northern Indian Curry – not too hot, and easy to prepare–extra chili or hot sambal can be added by the individual–if they are hot heads!!
