Carbonnade of Beef

This is my tweaked version of a recipe taken from my very old and well worn copy of The Good Housekeeping Cookbook. This is said to be a very old and traditional recipe in Belgium. I think it has the best flavor when a dark beer is used. Also, the original recipe I have called for 8 large onions. I scaled the onions back a bit! Carbonnade of Beef is delicious served with cooked noodles, hot cooked rice or mashed potatoes.

Belgian Stew

Use a full-flavored ale when preparing this dish. I got this on emazing and want to share with all who love dishes prepared in Beer out here !

Witbrood

Witbrood recipe comes from a Flemish Baking Bread book. I have tried many recipes and I think the difference for making it dense and chewy is that there are no eggs and no real milk products and very little sugar.

Loin of Pork, Braised in Red Wine

From Ruth Van Waerebeek’s “Everyone Eats Well in Belgian.” She describes it as her mother’s signature dish. Recommends: “This wonderful dish is tradtionally served with Recipe #341811. Recipe #418054 make it a feast.”

Sweet Potatoes Congolese

From Juliette Elkon’s A Belgian Cookbook. Posted for ZWT 7. Don’t worry about the alcohol used to prepare this dish, it will have burned off during the cooking. The cooking time includes the 1 hour marinating time.
