From our local paper. In the original recipe 3 brown onions (roughly chopped) were used but due to allergy issues they have been omitted and also 2 bunches of baby carrots (trimmed) and 3 parsnips and I have added potatoes.
A Karen Martini recipe from her cookbook “cooking at home’. She suggests that 1 bunch carrots can be substituted by 1 turnip and 2 parsnips, peeled and cut into quarters. A nice vege side for any roast. You could use larger carrots and cut them into halves or quarters instead of baby carrots if wished….though the baby carrots give a lovely presentation
Butternut squash is a delicious nutty tasting vegetable. Roasting brings out it natural sweetness, which is nicely balanced with the spices. This dish is great with grilled fish or meat, or wonderful on its own with a spoonful of yogurt.
