Belgian Endive with Roquefort, Walnuts and Cranberries. The Vintage Press recipe provided courtesy of Chef David Vartanian.
A very refreshing way to kick up a cold beer. I must say I’ve experimented with many Gin and beer mixes. This is excellent and Stella (I enjoy the juniper in this one) then with Amsterdam Gin (with its citrus notes) is almost as good maybe just as good Depending on what you are looking for. The gin is a wonderful garnish but go ahead and add a lime, orange or whatever you enjoy.
This recipe will easily double for a big group or potluck. If you can, use lacinato kale, it’s not as tough as curly kale and lends itself well to raw salads like this one.The dressing is lovely with orange juice, mustard, and balsamic vinegar!
