A sweet variation on traditional Aussie campfire damper – from Super Food Ideas magazine. The original recipe states to use Pink Lady apples but you could use Royal Gala’s, Grannies, or any other that took your fancy. I’m sure you could try other fruit, too.
Served warm with soup these rolls will become a regular! Wrap dampers in a clean tea towel to keep them warm for up to 30 minutes. You could replace the pepper with sea salt and rosemary, and the camembert with grated tasty cheese.
I often make this Damper for the adults on 26 January to celebrate Australia Day. The boys eat their slice of Chilli Damper with their beer and a snag. The kiddies have a damper minus the chilli and beer.
