Hawaiian Chicken

This is a recipe that has been a family favorite for decades. My aunt gave it to my mom when she asked for it, I don’t know where my aunt got this recipe. We would serve this on top of some white rice.

Aloha Chicken Wings

Baked chicken wing appetizers with a fruity pineapple-orange based sauce. Very good! Great for parties and sports get-togethers.

Almost Tortuga Rum Cake

Next best to the original! On our visit to the Caribbean, we brought home the best Rum Cake I’ve ever had…. in fact it’s the very best of all cakes I’ve ever had!!! I then thought I’d send for some to be shipped to us and found the price to be $35 for the med. size ( I paid $18 on the Island) So my search for the recipe began! You can not purchase Tortuga Rum ANYWHERE except in the Caribbean – Whaler’s Vanille Rum should be a close match. This next best copy-cat comes from Newsgroup Rec.food.recipes.

Pani Popo (Samoan Sweet Bread)

Pani popo is a Samoan sweet roll that has coconut (and if you like, pineapple) on the bottom. It is very popular throughout the islands, as many islands make different variations of the dish. Keeping your hands moist, will help with kneading the dough.

Panipopo (Samoan Sweet Coconut Buns)

These delicious, soft buns are made even better with the addition of the sweet coconut sauce. They are so easy that even I made a perfect batch!!! These are usually served upside-down so the sauce ends up on the top. I got this recipe from Seta’s “Panipopos’ Kitchen”. Enjoy!
