I took the Hellmann’s® / Best Foods® Mayo recipe from TV and made some modifications to add some zest. I was interested in using this basic combination on chicken as it was the basis of the standard recipe I use to make great Garlic Bread: Mayo, Parm and Garlic. I started by coating the chicken with Frank’s® Hot Sauce to add just a little kick of flavor. The second modification is that I also added Garlic Powder to the Mayo mix, otherwise it is the basic recipe from Hellmann’s. I also used skinless boneless chicken thighs and the result was very very tasty, everyone enjoyed the flavor and the moistness of the chicken. The prep is easy and can be prepared quickly.
Here’s a bread that I made for one of our themed, carry-in work lunches. It is from Paul Grimes and was in Gourmet (May 2003). It’s a sweet bread with a grainy texture similar to cornbread. We served it with a curried/fruity chicken salad and iced tea but it would also be nice with butter or marmalade and a cup of hot tea….or maybe toasted….

A sticky-rum soaked cartoon of a cake. You must try it, is is worth every ounce of money and effort! My sister’s favorite request every Christmas. I start making it in October. This cake is euphoria. This is Fruitcake done right. YOU WILL NEED TO START THE BAKING PORTION OF THIS CAKE AT LEAST A WEEK BEFORE YOU WANT TO EAT IT. BEGIN SOAKING THE FRUITS AT LEAST A MONTH IN ADVANCE. Not really for the novice baker (only because you have to figure out the baking time on your own based on the size of the cakes you make). I recommend mini loaf pans for this. Merry Christmas!
