When we often stay away at big hotels we request the breakfast buffet in the morning. Although I don’t eat bacon or eggs and I’m not into sweet pastries. So I really look forward to morning veggies such as sautéed mushroom, grilled tomatoes, home made style baked beans on toast and hash browns. This sautéed mushroom is not like the ones served at the hotels but it satisfy my cravings.

Unlike American pancakes, the Australian pikelets can be purchased ready-made in grocery stores. You can eat the cold or hot and they are typically topped with cream, jam, fruit or butter and sugar! They are handle for snacks and lunches. I found these on an Australian website. Enjoy!
From Australian Super Food Ideas. A very tasty potato dish. Have included cooking time for boiling potatoes and making sauce and oven time. I think you could make this ahead and keep in the refrigerator but would have to take out for at least 30 minutes before cooking and would cook at a slightly lower temperature for longer to ensure it heats all the way through. NOTE 28 May’10 – Tasty cheese = cheddar, usually a young one; my personal preference is a sharp or aged vintage one depending what I have on hand but all will work well but just give a different depth of flavour. Also a sprinkle of paprika on top (or mixed with breadcrumbs does not go wrong – not unusual for me to do on a cheesy topped dish).
This is a simple way to prepare your veggies, but it looks really pretty and tastes delicious. The good thing about this technique is you can steam them ahead of time, and then sauté them at the last minute so you have a hot side dish ready with the rest of your meal.
