Steve’s Often Copied, Never Duplicated, Furikake Chex Mix

This is a sweet and spicy Asian variation of Chex mix. There are times I have made this by the bucketful, and it still runs out at parties. I often give this out as Christmas or hostess gifts. Be very careful. This party mix is HIGHLY addictive, very dangerous to keep around in big quantities and may result in some weight gain!This recipe is a combination of a few recipes, one from foodgeeks.com and another from beanpaste.blogspot.com. It also has a few of my own personal touches.

Hawaiian Red Tuna Poke

Poke. Most people on the islands pronounce it Pokey (like Gumby’s red pal) but it’s pronounced Poke (rhymes with Okay). Otherwise it would be spelled Poki in Hawaiian. Anyway, it’s usually made with ahi (the Hawaiian word for yellowfin tuna), basically it’s a raw fish salad, usually flavored with soy sauce, sesame oil, kukui nut, and seaweed.

Macadamia Nut Chicken Breasts

The Macadamia nut crust keeps the chicken moist and adds a rich nutty flavor. You can also use the crust for fish. Serve with Mango Salsa or Chutney. Posted by request from Sam Choy’s “Island Flavors”. Prep time includes marinating and chilling.
