Weight Watchers Parmesan Crusted Chicken Schnitzels

This delectable low-calorie chicken dish is packed with flavour but not calories and is perfect for anyone following the 5:2 Diet as well as Weight Watchers. It’s a favourite meal for me and my husband when we are on a diet, when I serve it with lots of steamed greens and a grilled tomato. For a gluten free version use crushed cornflakes in place of the breadcrumbs. NB: Please note these don’t have any oil brushed on them as they are for a very low-calorie diet! If you are NOT worried about the extra calories, please brush the chicken fillets with a little oil before baking, or pan-fry them in a little oil or butter.

Milk Chocolate Florentine Cookies (Faster Nestle Version)

These are cookies from Austria with origins in Italy. Great when you want a cookie from around the world. They are crisp and delicate lacy like cookies when put together with chocolate make a sandwich cookie. It is meant to be crisp. Traditional Florentines have fruit in them but these are the chocolate version. This recipe is from Nestle and saves oodles of time by microwaving the chocolate rather than using a double broiler. Enjoy these they are a hit.

Creamy Austrian Rice With Peas and Onions (Quick)

This recipe is SO SIMPLE! But oh so good!!!!!!! A great way to make a quick side dish without a lot of fuss, but great flavor! My own concoction, though I think it’s Austrian…??? I think I saw Emeril?? make it years ago, but I didn’t write it down. So this is my own version. My picky hubby even likes it! 🙂 Haha! And he swears he hates Minute Rice!
