Zesty One Pan Chicken and Potato Bake

Very easy and quick to make! You can use whatever chicken you have (i.e. breasts, thighs, etc) Add as many cut potatoes and carrots as you need to feed your family. I just drizzle the dressing and sprinkle the cheese so they are approximate measurements.

Simple Tuna Pasta Salad

Some of the best recipes are the most simple. This is one of those. I prefer it just as written, but you may add any ingredients you choose such as chopped onion, scallions, chives, water chestnuts, chopped hard-boiled eggs, lemon-pepper, dill, parsley, etc. I often take this to potlucks when I need a quick and easy (and economical) dish. I’ve never had to take home left-overs. Tuna pasta salads can be found at many pot lucks. Albacore tuna is plentiful on the Pacific Coast, and this recipe represents the Western U.S.

Simply Oven Baked Pork Chops and Rice

This is DH’s recipe. It is simple comfort food and is very versatile. You can use chicken quarters in place of chops or chicken broth in place of water. Feel free to experiment with different herbs. We never make this the same way twice. A side note: I would recommend using a bone in, fattier cut of pork and not loin chops in this recipe.
