Light and Fluffy Applesauce Bundt Cake with Brown Sugar and Cinnamon Crackle

Applesauce Cake
- 2 1/2 cups of flour
- 2 teaspoons of baking powder
- 1 teaspoon of salt
- 1 teaspoon of sodium bicarbonate (baking soda)
- 2 teaspoons of cinnamon
- 1/2 teaspoon of nutmeg
- 1 cup of unsalted butter
- 1 1/4 cups of granulated sugar
- 3 eggs
- 2 teaspoons of vanilla extract
- 1 1/2 cups of unsweetened applesauce
- 1/2 cup of milk
Streusel Topping and Filling
- 1 cup of flour
- 3/4 cup of brown sugar
- pinch of salt
- 1 teaspoon of cinnamon
- 1 stick of butter
- 1 cup of pecans
Instructions
- Make the streusel
- Whisk together all dry ingredients until well combined.
- Add cubed sugar and mix until crumbly.
- Cake
- Grease the bundt pan by spreading butter generously, coating every crevice.
- Sprinkle streusel all over the pan getting the sides and bottom.
- Preheat your oven to 350°F (175°C).
- In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg until well combined. Set aside.
- In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy using a hand mixer or a stand mixer fitted with the paddle attachment. About 5-10 minutes.
- Add the eggs, one at a time, beating well after each addition. Mix in the vanilla extract until fully incorporated.
- Gradually add the dry ingredients to the wet mixture, alternating with the applesauce and milk. Begin and end with the dry ingredients, mixing until just combined after each addition. Be careful not to overmix.
- Pour half of the batter into the pan over the streusel that has already been sprinkled in.
- Sprinkle a layer of streusel over the batter in an even layer.
- Pour remaining batter into the pan, smooth out with a rubber spatula. Sprinkle remaining streusel over the top evenly.
- Place the pan in the preheated oven and bake for 45-55 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
- Allow the cake to cool in the pan until it is no longer hot to the touch. Then carefully invert it onto a wire rack lined with parchment paper to cool completely.
Notes
The cake pictured was baked with a Nordic Ware bundt pan. If using Nordic Ware, allow more time to cool in the pan as they are quite heavy and hold the heat longer. A good 30-45 minutes of cooling time.
