Ingredients

  • 1 8 oz package of spaghetti pasta
  • 2 cups of tomato(s)
  • 2 cloves of garlic
  • 3 cups of spinach
  • 1/4 cup of basil
  • 4 cups of broth
  • 1 tablespoon of olive oil
  • salt and pepper
  • Parmesan cheese

Instructions

  1. Combine Ingredients In a large pot, combine the spaghetti, cherry tomatoes, minced garlic, spinach leaves, chopped basil, vegetable or chicken broth, and olive oil. Season with salt and pepper to taste.

  2. Bring to a Boil Place the pot over medium-high heat and bring the mixture to a boil, stirring occasionally to prevent sticking.

  3. Simmer Once boiling, reduce the heat to medium-low and let the pasta simmer, uncovered, stirring occasionally, for about 10-12 minutes, or until the pasta is cooked al dente and the liquid has mostly evaporated, leaving a creamy sauce.

  4. Serve Once the pasta is cooked to your liking and the sauce has thickened, remove the pot from the heat.

  5. Serve the one-pot pasta immediately, garnished with additional fresh basil leaves and grated Parmesan cheese if desired.
