Ingredients
- 2 tablespoons of olive oil
- 1 onion or 2 shallots finely chopped
- 2 cloves of minced garlic
- 1/2 teaspoon of red pepper flakes
- 1 cup of vodka
- 2 cans (28 oz each) of crushed tomatoes
- 1 cup of heavy cream
- salt and pepper
- 1/2 cup of Parmesan cheese

Instructions
Sauté Aromatics In a large saucepan, heat the olive oil over medium heat. Add the chopped onion and cook until it becomes translucent, about 5 minutes. Add the minced garlic and red pepper flakes, and sauté for an additional 1-2 minutes until the garlic is fragrant.
Deglaze with Vodka Pour in the vodka and simmer for about 5 minutes to allow the alcohol to cook off and the flavors to meld.
Add Crushed Tomatoes Add the crushed tomatoes to the saucepan. Stir well and bring the mixture to a gentle simmer.
Simmer the Sauce Reduce the heat to low and let the sauce simmer for about 20-30 minutes, stirring occasionally. This allows the flavors to intensify and the sauce to thicken.
Incorporate Heavy Cream Pour in the heavy cream, stirring continuously to combine. Simmer for an additional 5-10 minutes until the sauce is heated through.
Season and Finish Season the sauce with salt and black pepper to taste. Stir in the grated Parmesan cheese until it's melted and well incorporated.
