Vegetarian Bangers and Mash with Onion Gravy

Vegetarian Sausages
- 4 Beyond Meat/Impossible sausages (or your favorite plant-based brand)
- 2 tablespoons of olive oil
Mashed Potatoes
- 4 Potato(s), large, peeled and diced
- 1/2 cup of milk
- 2 tablespoons of butter
- salt and pepper, to taste
Onion Gravy
- 1 onion, large, thinly sliced
- 2 tablespoons of butter
- 2 tablespoons of flour
- 2 cups of broth, vegetarian
- 1 tablespoon of soy sauce
- salt and pepper, to taste
Instructions
Vegetarian Sausages
Preheat the oven according to the package instructions for the vegetarian sausages. Place the sausages on a baking sheet and drizzle with olive oil. Bake according to the package instructions until golden and cooked through.
Mashed Potatoes
- Boil the diced potatoes in a large pot of salted water until fork-tender.
- Drain the potatoes and mash them with milk, butter, salt, and black pepper until smooth and creamy. Adjust the seasonings to taste.
Onion Gravy
- In a pan, sauté the sliced onions in butter (or olive oil) over medium heat until caramelized.
- Sprinkle flour over the onions and stir to coat evenly.
- Gradually whisk in vegetable broth, soy sauce, salt, and black pepper. Simmer until the gravy thickens.
Assemble
- Place a generous serving of mashed potatoes on each plate.
- Top with the vegetarian sausages.
- Pour the onion gravy over the sausages and mashed potatoes

You can use Bisto Onion Gravy if you don’t want to make your own.
