Tapioca Meatloaf

This recipe is a McCall’s classic dating back to 1938, using pork, beef and tapioca as a binder it is gluten-free and super moist!

  • Total Time: 1 hour

Ingredients

  • 2 thin 2-inch slices of salt pork, diced
  • 2 lbs of ground beef
  • 1/2 onion, diced
  • 1/2 cup of minute tapioca
  • 2 1/2 teaspoons of salt
  • 1/4 teaspoon of pepper
  • 2 cups of tomatoes

Instructions

  • Preheat oven to 450°F (232°C)
  • Fry out salt pork, add onion, and cook until golden brown
  • Add pork, onion, and drippings to other ingredients and mix thoroughly.
  • Bake in loaf pan in hot oven (450ºF) 15 minutes; then decrease heat to moderate (350ºF) and bake 30 minutes longer, or until done.
