Slow Cooker Savory Meatloaf

For the Meatloaf:
- 2 large eggs, beaten
- 3/4 cup milk
- 2/3 cup fine dry breadcrumbs
- 2 tablespoons grated onion
- 1 teaspoon salt
- 1/2 teaspoon ground sage
- 1 1/2 lbs lean ground beef
For the Sauce:
- 1/4 cup ketchup
- 2 tablespoons brown sugar
- 1 teaspoon dry mustard
Instructions
- Prepare the meatloaf mixture:
In a large bowl, combine the eggs, milk, breadcrumbs, grated onion, salt, and sage. Add the ground beef and mix until just combined—do not overmix. Shape the mixture into a 9×5-inch rectangle or oval. - Transfer to the slow cooker:
Carefully place the meatloaf into the slow cooker pot. Cover and cook on low heat for 6–7 hours. - Make the sauce:
In a small bowl, whisk together the ketchup, brown sugar, dry mustard, and ground nutmeg. - Add the glaze:
Pour the sauce over the cooked meatloaf. Turn the slow cooker to high heat and cook for an additional 15 minutes. - Serve:
Gently remove the meatloaf from the slow cooker and let it rest for 5 minutes before slicing. Serve with mashed potatoes, roasted vegetables, or a fresh salad.
Notes
- For a spicier kick, add a pinch of cayenne pepper to the glaze.
- Line the slow cooker with parchment paper for easier removal.
