A tender and flavorful meatloaf made with ground beef, sage, and a sweet, tangy glaze—perfect for easy slow cooking!

Ingredients

For the Meatloaf:

  • 2 large eggs, beaten
  • 3/4 cup milk
  • 2/3 cup fine dry breadcrumbs
  • 2 tablespoons grated onion
  • 1 teaspoon salt
  • 1/2 teaspoon ground sage
  • 1 1/2 lbs lean ground beef

For the Sauce:

  • 1/4 cup ketchup
  • 2 tablespoons brown sugar
  • 1 teaspoon dry mustard

Instructions

  1. Prepare the meatloaf mixture:
    In a large bowl, combine the eggs, milk, breadcrumbs, grated onion, salt, and sage. Add the ground beef and mix until just combined—do not overmix. Shape the mixture into a 9×5-inch rectangle or oval.
  2. Transfer to the slow cooker:
    Carefully place the meatloaf into the slow cooker pot. Cover and cook on low heat for 6–7 hours.
  3. Make the sauce:
    In a small bowl, whisk together the ketchup, brown sugar, dry mustard, and ground nutmeg.
  4. Add the glaze:
    Pour the sauce over the cooked meatloaf. Turn the slow cooker to high heat and cook for an additional 15 minutes.
  5. Serve:
    Gently remove the meatloaf from the slow cooker and let it rest for 5 minutes before slicing. Serve with mashed potatoes, roasted vegetables, or a fresh salad.

Notes

  • For a spicier kick, add a pinch of cayenne pepper to the glaze.
  • Line the slow cooker with parchment paper for easier removal.
  • Leftovers make great sandwiches the next day!
