- 6 large potatoes, boiled, peeled, and sliced
- 2 medium yellow onions, halved and thinly sliced
- 1/4 cup white vinegar
- 1/2 cup olive oil
- 1 garlic clove, finely chopped
- 1 roasted red pepper, chopped
- 1 1/2 teaspoons salt
- 2 tablespoons sugar
- 1/2 teaspoon black pepper
- Optional garnish: 2 tablespoons chopped fresh parsley or dill
Instructions
- Prepare the Potatoes: Boil the potatoes until tender. Once cool enough to handle, peel and slice them into thin rounds or chunks. Place in a large mixing bowl.
- Make the Dressing: In a jar with a tight-fitting lid, combine the vinegar, olive oil, garlic, roasted red pepper, salt, sugar, and black pepper. Seal the jar and shake vigorously until well combined.
- Combine: Pour the dressing over the sliced potatoes. Add the onions and gently toss everything together to coat evenly.
- Chill: Cover the bowl and refrigerate the salad for at least a few hours or overnight to let the flavors meld.
- Serve: Before serving, toss the salad again and adjust the seasoning if needed. Sprinkle with fresh parsley or dill for a flavorful garnish, if desired.
