Moist, cinnamon-spiced apple cake topped with a perfect blend of sweet and salty caramel goodness.

  • Total Time: 55 minutes

Ingredients

Scale

For the Cake:

  • 2 cups of flour
  • 1/2 cup of granulated sugar
  • 1/2 cup of brown sugar
  • 1/2 teaspoon of sodium bicarbonate (baking soda)
  • 1/2 teaspoon of salt
  • 1 teaspoon of cinnamon
  • 2 egg(s)
  • 1 cup (2 sticks) of butter
  • 1 teaspoon of vanilla extract
  • 1/2 cup of buttermilk
  • 1 cup of water
  • 2 apple(s)

Salted Caramel Sauce:

  • 1 cup of granulated sugar
  • 6 tablespoons of butter
  • 1/2 cup of heavy cream
  • 1 teaspoon of salt
  • 1 teaspoon of vanilla extract

Instructions

  1. Preheat
Preheat oven to 350°F (175°C). Grease and flour a sheet cake pan.
  2. Whisk
In a large bowl, whisk together flour, sugar, baking soda, salt, and cinnamon.
  3. Mix
Add eggs, softened butter, buttermilk, water and vanilla extract. Mix until well combined.
  4. Fold in diced apples and pour the batter into the prepared pan.
  5. Bake
Bake for 35-40 minutes or until a toothpick inserted comes out clean.
  6. Prepare Caramel Sauce
While the cake is baking, in a medium saucepan, heat granulated sugar over medium heat, stirring constantly with a wooden spoon.
  7. Continue stirring until the sugar melts and turns amber in color. Be careful not to burn.
  8. Add the butter to the melted sugar, stirring until it’s completely melted.
  9. Slowly pour in the heavy cream while stirring continuously. The mixture will bubble, so be cautious.
  10. Allow the caramel to boil for 1-2 minutes, stirring constantly.
  11. Remove the saucepan from heat and stir in sea salt and vanilla extract.
  12. Allow to cool for a few minutes before drizzling over cake.
  13. Finish
Once the cake is cooled, drizzle caramel sauce over the top. Sprinkle a wee pinch of salt on top to finish.
