Ingredients

  • 1 lb of green beans, fresh, trimmed
  • 3 cloves of garlic, minced
  • 2 tablespoons of olive oil
  • 1 tablespoon of butter, unsalted
  • salt and pepper, to taste
  • 1 lemon, zested
  • water, iced for blanching

Instructions

  1. Blanch Bring a pot of salted water to a boil. Add green beans and cook for 2-3 minutes until crisp-tender. Transfer beans to ice water to stop cooking, then drain.

  2. Sauté In a large skillet, heat olive oil and butter over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant but not browned.

  3. Add green beans Pat the blanched green beans dry and add them to the skillet. Toss the beans in the garlic-infused oil until coated.

  4. Season Season with salt and pepper to taste. Sauté for an additional 2-3 minutes, allowing flavors to meld.

  5. Serve Transfer to a serving dish, garnish with lemon zest.
