  • 3/4 cup candied ginger
  • 1 (750 ml) bottle red wine (preferably one with a strong, bold flavor like shiraz or pinotage.)
  • 2 cinnamon sticks
  • 3/4 teaspoon ground nutmeg
  • 2 teaspoons ground cardamom
  • 1 tablespoon whole cloves, stuck into a slice of orange peel
  • 1/2 cup orange liqueur (cointreau, grand marnier, etc.)
  • 1/4 cup brandy (apple brandy, if you've got it)
  • 2 tablespoons orange zest (about 1/2 of a large orange)

Instructions

  1. Thinly slice the candied ginger.

  2. Grate (zest) the peel of 1/2 of a large orange.

  3. Pour half of the bottle of wine into a saucepan, add all other ingredients.

  4. Simmer over very low heat, stirring occasionally and adding more wine as liquid level gets low.

  5. When the bottle of wine is empty and the liquid has mostly evaporated, remove from heat and serve warm or cold.
