This is adapted from a recipe in the May 2013 issue of Food Network Magazine. I had to make so many substitutions I thought it should be its own recipe. It was delicious.

Salmon Grilled With Dill Sauce

I combined three recipes to come up with dinner tonight. I think it was good, but more telling is that my extremely picky husband actually ate it! The portions are approxmate, but just remember one part mayo to two parts sour cream and horseradish and lime to taste. You’ll love it!

No-Brainer Chili Verde

I’d forgotten this dish, but saw it on a menu in a new restaurant. Thought I’d give it a try one day. After the easy tamales came out so well that just translated to this perfectly. So simple! I served it over white rice. I used the copycat version of Lipton Soup Mix elsewhere on this site, it’s perfect.

Easy Cool Cucumber Salad

I adapted this from a recipe from the June 2011 issue of the Food Network Magazine; as I only had about half the ingredients I had to improvise. Glad I did, it’s a tasty and cooling side dish I’ll enjoy during our Cabo hot season. Hope someone out there enjoys it.

Tijuana Tacos

Living in Tijuana for years, it’s been hard to be back living in the U.S. Everyone once in a while, (once a month), I absolutely have to make this. Best if you can make homemade flour tortillas, but just fine with store bought.
