Watercress Tomato and Sole Soup

This is from “Herbs and Spices the Cook’s Reference” by Jill Norman. This light soup is made in the Cantonese manner. Any fine-textured fish in the flounder/sole family can be used.

Mahogany Glazed Cornish Hens

Conish hens are not just any small chickens, but a special, plumper hybrid developed in the late fifties. They are often sold frozen, but can be thawed overnight in the fridge. In found this recipe in Good Housekeeping magazine. I have not tried this recipe, but I’m posting it for safe keeping.

Chicory/Belgian Endive and Orange Salad With Ginger Dressing

This salad is one of the suggested side dishes that goes with Roast Salmon with Spiced Coconut Crumbs Roast (Recipe #141533). However, you may want to serve it as a side or starter in combination with other Asian style dishes. I have to admit that I’ve never followed this recipe exactly, but I often use it as a base.

Cheese and Green Leafy Salads – Formally Known As Watercress And

Any spicy green and mild cheese can be substituted with great success. Very easy but VERY tasty. The dressing is simple so use the best and freshest greens and cheese you can find- I have even used locally produced sheep, goat and cow cheeses- just keep it similar in flavor- like a good queso fresco- thanks cg for the suggestion! The secret is the spicy green with the mild cheese. Keep those two in mind when choosing any substitution. Amazing little salad based on a Whole Foods Recipe. Posted for World Tour 2005.
