Mock Beef Rissoles

This World War II recipe was first published by Marmite and is a tasty Vegetarian alternative to regular Rissoles. I’ve rewritten the directions to be a little more precise and suit modern methods to a greater extent. Marmite is a British ‘spread’ and you can obtain it at an international grocery store in the United States. As a WWII ad for Marmite says “stock your larder with a few jars of Marmite now!”. Vegetarian Albanian Leek Casserole (Tave Me Presh)

This is a vegetarian version of a traditional Albanian dish. It makes a tasty side and is delicious served with yogurt, which is commonly eaten in Albanian meals. You can use any mushrooms you want, but the stronger tasting ones are better. Spice to taste, I like more red pepper than the Albanians probably do. Butternut squash stew

Butternut squash makes a lovely vegetarian stew when mixed with a few store cupboard ingredients. A great dinner for busy days where you want something cheap and healthy. If you add plant-based yoghurt, it’s also vegan.
