Thaw and marinate your chicken at the same time in this wonderful concoction! Toss it all in a zipper seal bag and throw in the refrigerator. Ready the next day to throw on the grill! Use bone in or boneless. This marinade will cover about 4 lbs of chicken.
This IS a WONDERFUL SOUP. And look at the list, just a few ingredients! I came up with lots of GREAT ideas for the contest, but when I asked my friends what they liked best, they always mentioned this humble soup! How funny is that? The rum really makes a difference. It is added at the very end, so if you have kids at the table and you’re worried about it, just serve them first and add the rum later. You may want to leave it out altogether, but just let me tell you one more time that the RUM IS a LOVELY ADDITION. I use Patak’s curry paste which is available in Asian stores where I live. Madras is labelled as a hot paste and Korma as mild. I’ve also tried a Patak’s paste called HOT/TRES EPICE which I do NOT RECOMMEND.
The light, slightly crispy fish cakes can be a welcome change to any Caribbean meal. Use the accompaning curry aioli (lots of garlic flavor there!) with it or use your favorite tartar sauce. Note: if using salt cod, you will have to soak that for several days in water, changing out the water about every 6 hours until the saltiness goes away (refrigerated). Then you will need to remove any bones, skin and cartilage if they are present, before boiling and flaking your fish. Enjoy!
I’m from Seattle and everynight when all the bars are closing, party-goers flock to the multitude of hot dog stands lining the streets (affectionally called “street meat”). The most popular option is the tried and true Seattle Dog. It sounds like a wierd combination but it is oh so delicious! Some places also add sauteed cabbage if you want to give that a try.
